Prerequisites
- Students must hold a valid HACCP certification prior to enrollment.
- Students must have prior knowledge and/or professional experience in the food industry or related sectors.

- What is a HACCP/food safety system audit? – History, relevance, definitions.
- The fundamental principles of a HACCP audit – Review, evaluation, and testing.
- Introduction to ISO 19011:2018 – Guidelines for auditing management systems
- Introduction to the internal auditor Codex HACCP, CAC/RCP 1-1969, rev. 4-2003
- Managing an audit program – Developing a comprehensive audit schedule.
- Auditor aspects – Integrity, independence, objectivity, etc.
- The seven steps of a HACCP audit – Announcement, planning, opening meeting, review and testing, closing meeting, reporting, and follow-up.
- Launching the audit – Developing an audit strategy to achieve the objectives.
- Conducting the document review – Records of work planning and execution, procedures implemented, evidence obtained, and conclusions drawn by the auditor.
- Preparation for the audit review – Understanding the objective and scope of the audit.
- Conducting audit activities – Assigning tasks, organizing opening meetings, communication, etc.
- Preparation of the audit report – The introductory paragraph describes the scope and objectives of the audit, summarizes the conclusions, and presents the auditor’s opinion.
- Completion of the audit – Objective evidence supporting the overall conclusions of the audit.
- Follow-up – Verification of the effective implementation of recommendations.

Examinable
- Each of the 12 modules includes a series of questions related to the topic taught.
- The questions in the module are optional, and the results are not included in the final grade.
- There is a final exam consisting of 24 questions randomly selected from the modules.
